Sick Japanese Maple

Unhappy Sick Japanese Maple

My Japanese Maple which is approximately 6 years old is not leafing up as it should. The middle is quite sparse and some branches have no leaves. Some of the new leaves have a shrivelled look. I have spread cow poo from a nursery under it and it is watered quite well. I would really appreciate any advice. Thanks,
