I am growing a very young peach tree...roughly one year old. My housing situation is in question right now so I'm hesitant to put the tree in the ground; as I don't want to unearth it later on if I must move it. Would growing it for a year or so in a large ceramic pot be a good solution to my problem?

That depends on how much larger the pot is compared to the pot you got it in, it needs room for roots to grow.

The tree stands at about 5 feet right now. How many gallon pot would be practical? bigger the better I suppose...but do I need a monster pot at the time?

Go as big a pot as you can handle, maybe forget the ceramic due to weight and get a boring plastic one that has handles.
